Why do you need special cookware for induction hobs?

Unlike conventional electric ranges that heat a burner's coil, induction hobs use an electromagnetic field to heat cookware directly. The advantage: it doesn’t waste any heat. Cookware must be ferromagnetic to work with induction, containing either iron or a special layer with magnetic properties.

Which type of cookware is best for induction cooking? Which should be avoided?

If a magnet firmly clings to the bottom of a pan, it's induction friendly. Cookware made of cast iron in additional to most stainless steel cookware are good options. A non-stick pan is easy to clean and use – just make sure it’s suitable for induction. Aluminum and pure copper are not compatible with induction hobs unless they have a special magnetic layer.
