What This Leading Trend Means for You and Your Kitchen

The Rise of Induction Cooking

While induction cooking is already a popular cooking method on the international stage, it has recently been trending upward in the United States as more Americans learn about the wealth of benefits afforded by induction. The Association of Home Appliance Manufacturers (AHAM) 2021 report highlights that induction range shipments continue to grow annually – with 38%-unit shipment growth between 2017 and 2021, and 2022 market reports show that the worldwide induction cooktops industry is expected to reach $1.2 billion by 2027.1

What is Induction?

Induction cooking is beloved by many of the world’s top chefs and burgeoning home cooks alike, and is becoming more widely adopted by many consumers. So, what is induction cooking?

Induction cooking is different from electric or gas cooking, as it uses electromagnetic energy to heat pots and pans directly. In comparison, gas and electric cooktops heat indirectly, using a burner or other heating element to pass radiant energy onto your food. When you place a pan on an induction cooktop and turn on the cooktop, an electric current travels through a coiled copper wire, which applies heat directly to your pan. Heating the cookware directly prevents heat loss (plus, the area surrounding your pan remains cool to the touch, since only your pan gets heated).

7 Benefits of Induction Cooking:

The key benefits of cooking with induction include:

1. More Precise Cooking:
Precision in cooking is important, whether you are searing a steak or looking to perfectly recreate a beloved family recipe that’s been passed down for generations. Because induction cooktops use energy more efficiently in the cooking process, induction cooktops are able to achieve a wider range of temperatures for more precise cooking, and the precise temperature results in more consistent and reliable results. In addition, Bosch induction cooktops offer features like the 17 precise heat levels, which provides consistent temperatures for everything from simmering delicate sauces to searing steaks, as well as AutoChef®, which regulates temperatures continuously when boiling water or frying on the cooktop, automatically adjusting temperatures as needed for even results.

2. Saving Time:
How many times have you waited for a pot of water to boil so that you can make a quick bowl of pasta on a busy weekday night? Induction cooking mitigates this inconvenience and helps save you time: water boils about three times as fast on an induction cooktop, and overall, induction can be about three times more efficient than gas cooking. On Bosch induction cooktops specifically, the SpeedBoost® function increases power by up to 50% to quickly heat pots or boiling water.

Induction also enables you to save time by multi-tasking. There’s no need to place a dish in the oven to keep it warm – every part of the meal can be cooked at the same time on Bosch induction cooktops, especially with the Keep Warm function which keeps cooked foods warm and ready to serve, without scorching.

3. Sustainability and Energy Efficiency:
Induction cooktops offer greater energy efficiency than traditional cooktops. According to the American Council for an Energy-Efficient Economy (ACEEE), 90% of the energy from induction cooking is transferred to the food, compared to 74% for traditional electric systems and 40% for gas cooking appliances. With induction cooking the source of heat is the cookware itself and the cooktop surface remains cool to the touch, so it reduces the amount of heat expelled to the home, providing an additional energy efficiency benefit by reducing the workload of HVAC systems.3

At Bosch, we are committed to the idea that consumers should not have to sacrifice quality or performance while doing their part to protect the planet. We strive to design some of the most energy and water-efficient appliances available to help Americans reduce their environmental impact within the home. Along with providing a suite of highly efficient induction cooktops, each and every model for Bosch dishwashers, refrigerators and laundry pairs have attained ENERGY STAR® certification, a widely recognized and trusted label for appliances that meet strict energy-efficiency requirements set by the U.S. Environmental Protection Agency (EPA).

4. Cleanability:
Induction cooktops are easy to clean because they heat pots and pans directly allowing the surface to be cool to the touch, so that when food splatters onto the cooktop, the food will not bake onto the surface. All it takes is a simple damp cloth to wipe the glass surface clean.

5. Improved Usability:
For usability, Bosch induction cooktops offer flexible cooking “zones” for convenience, efficiency, and better utilization of space. With the FlexInduction® feature on Bosch induction cooktops, users can cook with various pot and pan sizes all at once, and at different temperatures, by combining two cooking zones into one larger zone.

6. Connectivity:
To further simplify the cooking experience, Bosch induction cooktops are equipped with Home Connect™, a smart home technology platform that supports Wi-Fi-enabled appliances. Features include the ability to check the cooktop to answer the common concern, “Did I leave my cooktop on?”, or receive notifications when a cooking zone is turned off or a timer has expired, so you immediately know when your meal is ready. Bosch induction cooktops and hoods equipped with Home Connect also allow users to control the hood fan and ventilation settings remotely as well as sync the hood to your matching cooktop for automatic deployment when preparing a meal.

7. Sleek Design:
From a design standpoint, induction offers a sleeker look ideal for a variety of kitchen styles. The black glass surface on Bosch induction cooktops integrates beautifully into any kitchen for a modern and minimalist aesthetic.

In many ways, induction represents the future of cooking innovation. Whether it means saving energy and time for busy households, producing more precise and consistent cooking results, or supporting sustainability in the home, induction marries the joy of cooking with the need for appliances that deliver on consumers’ greatest needs in the kitchen.
