Ingredients:
Makes Four Servings
Chicken:
4 boneless, skinless chicken breasts (about 4 ounces each)
1- 1/2 teaspoons kosher salt
1/2 teaspoon ground white pepper
1/2 teaspoon curry powder
2 large ripe mangos
1 tablespoon mango chutney
2 tablespoons cognac or brandy
1 tablespoon unsalted butter
Almond topping:
1/4 cup sliced almonds
1 tablespoon all-purpose flour
1 large egg yolk
1/2 crème fraiche
Method
1. Preheat oven to 425°F. Butter bottom of 4 quart rectangular ovenproof dish; set aside. In small bowl add Almond Topping ingredients; stir to combine and set aside.
2. Peel mangos and remove flesh lengthwise from both sides of stone. Slice mango into strips; place into bottom of buttered dish and season lightly with salt and white pepper. Stir in mango chutney and cognac.
3. In small bowl combine salt, pepper and curry powder; season chicken breast on both sides with mixture. Place seasoned chicken across the top of mango mixture.
4. Roast chicken for 40 minutes.
