Easy Dinner Recipes: Italian Chicken with Potatoes and Onions

With fresh flavors like earthy herbs, zesty lemon and crisp white wine, this easy dinner recipe for Italian chicken with potatoes and onions will send your taste buds on a European vacation—without leaving the comfort of your own kitchen.

Makes 8 servings
Ingredients:
4 chicken drumsticks, skin on
4 chicken thighs, skin on
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
2 pounds small Yukon potatoes, cut into quarters
1 cup of dry white wine
¼ cup olive oil
1 tablespoon kosher salt
1 tablespoon fresh ground pepper
1 tablespoon finely chopped fresh oregano
2 lemons, cut into quarters
Finely chopped fresh parsley, as desired
Method:
1. Preheat oven to 375⁰F
2. Season chicken with 1 teaspoon salt and 1 teaspoon pepper; set aside
3. In large roasting pan add potatoes, onions, wine, oil, 1 tablespoon salt, 1 tablespoon pepper and oregano; toss to coat vegetables. Place seasoned chicken and lemon wedges on top of vegetables; roast 60 to 70 minutes or until chicken has reached an internal temperature of 165⁰F and vegetables are tender and golden brown.
4. Remove chicken and vegetables to serving platter and sprinkle with chopped parsley.
