What is induction cooking and how does it work?

Induction cooking is widely loved by chefs and home cooks, but is still not yet widely known by many consumers! Induction cooktops work a little differently from a traditional gas cooktop but there are many benefits—induction uses the cookware to generate the heat for faster, more efficient heating. When you place a pan on an induction cooktop and turn on the cooktop, an electric current travels through a coiled copper wire, which produces and applies heat directly to your pan.

Heating the cookware directly prevents heat loss (plus, the area surrounding your pan remains cool to the touch, since only your pan gets heated). The main advantages of induction cooking you’ll immediately notice are the speed of cooking and also the ease of clean-up.

For added safety, the control panel also has a heat indicator to let you know which sections are still hot after you finish cooking. Once the surface reaches a safe temperature, the indicator turns off.

Is induction cooking safe?

Induction cooking is considered safe due to several key features. First, since induction cooktops heat the cookware directly, the surrounding surface of the cooktop remains relatively cool to the touch, reducing the risk of accidental burns. Additionally, Bosch induction cooktops have built-in safety features such as automatic shut-off, pan detection, and overheat protection. These features contribute to a safer cooking experience by minimizing the likelihood of accidents or mishaps. However, it's essential to exercise caution and handle cookware with care to prevent any potential risks.

Are induction cooktops energy-efficient?

Induction cooktops offer exceptional energy efficiency by directly heating the cookware through electromagnetic fields. This direct heat transfer results in faster and more precise heating compared to traditional electric or gas cooktops. The efficient nature of induction cooking stems from the fact that heat is generated directly in the pan, ensuring minimal heat loss. This not only saves valuable time in the kitchen but also contributes to reduced energy consumption, making induction cooking an environmentally conscious choice. By harnessing the power of induction technology, you can enjoy efficient and eco-friendly cooking while minimizing your environmental footprint.

Induction compatible pots and pans

Most common types of cookware material are compatible with induction cooktops. This includes cast-iron, steel, magnetic stainless steel, ceramic-clad, and enameled pots with an iron pan hidden in the ceramic layer. Fortunately, this means that you can use most pots and pans on your induction cooktop. To be sure, simply place a magnet at the bottom of your cookware. If the magnet sticks, your cookware can be used with your induction cooktop. Remember to use quality pots and pans, such as those offered by Bosch, to ensure the most even cooking and best heat distribution. We offer a range of induction ready cookware options to meet your needs and ensure seamless compatibility with your cooktop.

What is the difference between induction and electric cooktops?

Induction and electric cooktops differ in their heat generation methods. Electric cooktops use coils or radiant heat elements beneath a ceramic or glass surface to transfer heat to the cookware and surrounding area. In contrast, induction cooktops utilize magnetic fields to directly heat the cookware, bypassing the cooktop surface. This distinction in heat transfer leads to another significant difference - responsiveness. Induction cooktops heat up and cool down rapidly, allowing for quick adjustments during cooking. On the other hand, electric cooktops may have slower response times due to the heat transfer process. These differences in heat generation and responsiveness are important factors to consider when deciding between induction and electric cooktops.

Requires little maintenance

Induction cooktops require little maintenance other than cleaning. This makes it super easy to keep your appliance working efficiently for a long time. For best results, apply cooktop cleaning cream daily. See below to learn how to clean your induction cooktop.

How to clean induction cooktops

One of the greatest benefits of induction cooktops is the ease of keeping it clean. There are no grates that need to be removed and cleaned separately like with gas cooktops.

Simply wait for the cooktop to cool and apply a small amount of cooktop cleaner with a clean cloth. Then, wipe the surface with a damp cloth and use a soft cloth to dry it.

For dried-on food, let the cooktop cool and scrape it off with a glass scraper. Be sure to use the scraper at a low angle (such as 20° or 30°) to avoid scratching your cooktop.

That’s it!

Safer to use

Induction cooktops are safer to use because unlike other types of cooktops, they do not release indoor air pollutants during cooking.

They also reduce the risk of burns because induction cooktops only generate heat when compatible cookware is placed on top and cool quickly once the cookware is removed.
